Food production and distribution use up a lot of energy. We talk about “Food miles” to describe the environmental impact of food transport over long distances. A study in Britain showed that 20 fresh items purchased from a supermarket had travelled an average of 5,000 miles each. 20% of all greenhouse gases globally come from current agricultural processes.
The way we produce and transport food has become unsustainable – the costs in energy and environmental impact cannot continue to rise as they are at the moment.
